Fluffy Vegan Pancakes Ready in Minutes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plant-based milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract

Preparation

  1. In a large bowl, whisk together flour, sugar, baking powder and salt

  2. In a separate bowl, combine plant-based milk, vegetable oil and vanilla extract

  3. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix

  4. Heat a non-stick skillet or griddle over medium heat

  5. Pour 1/4 cup portions of batter onto the hot griddle for each pancake

  6. Cook until bubbles form on the surface and the edges are set, then flip and cook until golden brown

  7. Serve warm with maple syrup or your favorite toppings
