Simple Vegan Blueberry Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup non-dairy milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
- 1 tbsp lemon zest
Preparation
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the non-dairy milk, vegetable oil, vanilla extract, and lemon zest.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the blueberries.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
