Vegan Breakfast Pancakes with Blue Spirulina
Ingredients
- 200 g all-purpose flour
- 2 tbsp raw cane sugar
- 10 g baking powder
- 250 ml plant-based milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- Blue spirulina powder (amount varies based on desired color effect)
Preparation
In a large bowl, combine the dry ingredients (except for the blue spirulina powder if you want an ombre effect).
Pour in the plant-based milk, apple cider vinegar, and vanilla extract. Whisk well to form a smooth batter.
Heat a nonstick pan and begin cooking the pancakes. Cook each side for about 1 minute.
Leave the first two pancakes plain. After every two pancakes, add blue spirulina powder to the remaining batter. Use approximately 1/4 tsp of powder after every 2 pancakes.
Continue cooking the pancakes until all the batter is used.
Serve the pancakes and enjoy!
