Vegan Breakfast Pancakes with Blue Spirulina

Ingredients

  • 200 g all-purpose flour
  • 2 tbsp raw cane sugar
  • 10 g baking powder
  • 250 ml plant-based milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • Blue spirulina powder (amount varies based on desired color effect)

Preparation

  1. In a large bowl, combine the dry ingredients (except for the blue spirulina powder if you want an ombre effect).

  2. Pour in the plant-based milk, apple cider vinegar, and vanilla extract. Whisk well to form a smooth batter.

  3. Heat a nonstick pan and begin cooking the pancakes. Cook each side for about 1 minute.

  4. Leave the first two pancakes plain. After every two pancakes, add blue spirulina powder to the remaining batter. Use approximately 1/4 tsp of powder after every 2 pancakes.

  5. Continue cooking the pancakes until all the batter is used.

  6. Serve the pancakes and enjoy!
