Quarantine Pancakes with Chocolate Chips and Berry Syrup

Ingredients

  • 3 cups gluten-free flour
  • 2 cups almond milk
  • 2 medium ripe bananas

Optional add-ins

  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 cup of chocolate chips, blueberries, or crushed nuts, etc (or a combination)

Berry syrup

  • 1/4 cup blueberries
  • 1/4 cup blackberries
  • 1/4 cup maple syrup

Preparation

  1. Mix all pancake ingredients together to form pancake mixture. Then, add in chocolate chips, blueberries, etc. and mix through to evenly spread them throughout mixture.

  2. Heat non-stick pan on medium-low and pour 1/3 cup of batter, using a measuring cup to ensure equal size.

  3. Let pancakes cook until bubbles appear around edges, then flip and cook until golden.

  4. For berry syrup: blend ingredients in high speed blender until smooth. Pour over pancakes. Add fresh fruits or other toppings of choice!! Enjoy!! XO
