Crispy Chipotle Tofu Bowl
Ingredients
- 1 firm tofu, pressed
- Juice of 1/2 lime
- 1 teaspoon salt
- 2 teaspoons pepper
- 1 tablespoon cornflour
- 2 shallots, finely chopped
- 1 pepper, finely chopped
- Handful of basil
- Oil for frying
Sauce
- 2 tablespoons soya sauce
- 1 tablespoon chipotle paste
- 1 tablespoon tomato paste
- 1/3 cup water
Preparation
Break the pressed tofu into tiny pieces, coat with lime juice, salt, and pepper, and dust with cornflour.
Heat oil in a skillet. When the oil is hot, add the tofu and stir fry until crispy and golden.
Push the tofu to one side of the skillet and add a bit more oil to the other side.
Add the shallots into the oil and cook until translucent, then add the peppers and basil and mix well.
Whisk all the ingredients listed under the sauce and pour into the skillet.
Season and serve with rice or tortillas.
