Shredded Tofu Tacos with Curried Slaw
Ingredients
Tofu mixture
- 200g firm tofu
- 1 tablespoon soy sauce
- 1 teaspoon five spice or favorite spice mix
- salt to taste
- 1/2 tablespoon oil
Glaze
- 4 tablespoons hoisin sauce
- juice of 1/2 lime
- 2 tablespoons water
Curried slaw
- 1/2 small pointed cabbage
- a good handful cilantro
- juice of 1/2 lime
- 1 teaspoon maple syrup
- 1 teaspoon curry powder
- salt to taste
- 2 tablespoons vegan mayo
Preparation
Shred the tofu using a grater.
Mix the shredded tofu with soy sauce, five spice or favorite spice mix, salt to taste, and oil.
Bake the mixture at 180°C for 25 minutes, stirring halfway through.
For the glaze, bring hoisin sauce, juice of 1/2 lime, and water to a bubble in a pan.
Glaze the baked tofu with the mixture.
Thinly slice the cabbage.
Chop the cilantro.
Mix all curried slaw ingredients well with your hands.
Serve the glazed tofu on tacos with the curried slaw.
