Kale Buffalo Caesars Salad
Ingredients
- 1 avocad
- 3 cups chopped kale
- 6 buffalo tofu strips (recipe below)
- 1/4 cup tahini caesars dressing (recipe below)
- 2 tbsp capers
- 1 tbsp black sesame seeds
- 1/4 cup chopped spring onions
- 1/4 cup vegan parmesan (recipe below)
- tahini caesars dressing:
- 1/2 cup tahin
- 1/2 cup water
- 1 tbsp capers
- 1/2 tbsp apple cider vinegar
- juice of one lemon
- 1/2 tbsp seeded mustard
- 1 garlic cloves
- 4 tbsp nutritional yeast
- salt & pepper to taste
Preparation
Prepare buffalo tofu strips

In the mean time your tofu strips cook, prepare tahini caesars dressing by placing all ingredients in a high speed blender and pulse until smooth
Add kale and 1/4 cup of the dressing to a bowl and massage your kale for 3 min until completely covered by dressing
Add caper and parmesan cheese and mix until well combined
Divide salad into two separate bowls, top with tofu strips, half avocado
Sprinkle sesame seeds and spring onion to each bowl
