Mild Creamy Mushroom Curry
Ingredients
- Olive oil
- 1 package fresh mushrooms or portobellos, cleaned
- 1 large chopped onion
- 1 chopped garlic clove
- 300ml coconut milk
- Ground coriander, to taste
- Ground ginger, to taste
- Turmeric, to taste
- Mild curry powder, to taste
- Ground black pepper, to taste
- Cayenne pepper, to taste
- Salt, to taste
Preparation
Sauté the onion and garlic in olive oil and cook for about 15 minutes, stirring occasionally, to prevent burning.
Add the spices except the curry powder and mix well.
Add the mushrooms and cook for a few minutes.
Add the coconut milk and curry powder, mix well and let it cook for a few minutes on low heat until the flavors intensify.
Season with salt and pepper and serve with basmati rice or your preferred rice.

This recipe is suitable for vegans.
Mild curry powder is not spicy and can be found in health food stores or dietary shops, with an incredible flavor.
