Avocado Toast with Roasted Red Pepper Hummus and Chimichurri
Ingredients
- Ripe avocado
- Slices of toast (sourdough recommended)
- Roasted red pepper hummus
- Homegrown red tomatoes
- Chimichurri sauce (see recipe below)
- Furikake sprinkles
- 1/2 red onion
- 30g fresh parsley and/or coriander
- 2 cloves garlic
- 2 tbsp rice vinegar
- 3 tbsp extra virgin olive oil
- 1/2 tsp chili flakes
- 1 tsp dried oregano
- Juice of 1/2 a lemon
- Good grind of salt
Preparation
Put the red onion, fresh parsley and/or coriander, garlic, rice vinegar, olive oil, chili flakes, dried oregano, lemon juice, and salt in a food processor.
Blitz the ingredients into a rough, slightly runny paste.
Toast the slices of bread until golden and crispy.
Spread a generous layer of roasted red pepper hummus onto each slice.
Cut the ripe avocado in half, remove the pit, and scoop the flesh onto the hummus-covered toast. Gently mash the avocado with a fork and spread it evenly.
Slice the homegrown red tomatoes and arrange them over the avocado.
Drizzle the prepared chimichurri sauce over the tomatoes.
Sprinkle furikake over the top for added flavor and texture.
