Chickpea Curry
Ingredients
- Water Fry chopped onions and garlic
- add the veggies you wish. I love to add some eggplant
- zucchini
- and mushrooms
- when cooked add your chickpeas! Half a cup of unsweetened soy milk
- 1/4 of water
- turmeric
- pepper
- garlic powder
- ginger powder
- little bit of nutmeg
- cayenne pepper
- and to spice it all up chili flakes! Le it cook on low until liquid thickens! I served it with some squash seeds
