Clumsy Coconut Blackbean Burgers

Ingredients

  • black bean: 1 can drained
  • potato: 1 boiled and peeled
  • scallions: 1 finely chopped
  • Desiccated coconut: 3/4 C
  • Coriander: 1 C
  • Cajun spice: 1 1/2 T
  • Cumin powder: 1/2 T
  • Tomato paste: 1/2 T
  • Salt to taste
  • Olive oil for frying

Preparation

  1. Mash together black beans and potato

  2. Mix in coconut, cajun and salt

  3. Heat a olive oil in a pan and add scallions, cumin, tomato paste and parsley

  4. When onions are add to the black bean mixture

  5. Shape into burgers and shallow fry
