Courgette Pancake Fritters

Ingredients

  • 1 medium courgette, grated
  • 1 large egg
  • 1/2 tsp baking powder
  • 3 tbsp flour
  • 1/2 tsp paprika
  • salt and pepper to taste

Preparation

  1. In a large bowl, mix together the beaten egg, baking powder, flour, paprika and pinch of salt. Squeeze the excess water out of the grated courgette and add to the mixture. A thick pancake-like consistency should form. Heat oil in a pan over a medium heat and scoop in large tablespoons of the batter, flattening the individual spoonfuls into pancake shape. Cook for approx. 6 minutes, flipping half way, or until the pancakes turn golden on the outside

  2. Served with wilted spinach, tomatoes and a poached egg - a side of avocado would work well too
