Flavored Vinegars
Ingredients
- 1/4 cup nasturtium leaves
- 2 cups white wine vinegar
- Any other herbs you’d like to add- rosemary seems to be popular
Preparation
Place flowers, leaves, and any other herb in a jar
Add vinegar
Cover with lid - if it’s metal, put a piece of parchment or wax paper in Bette
Steep for 2–3 weeks
Strain through a fine mesh strainer
Store in a cool, dark place
Keep a few flowers in the bottle and leave it on the table at your dinner party as a substitute for balsamic vinegar
