Fresh Gyoza Salad with Sesame and Soy Dressings

Ingredients

  • 1 large cucumber
  • 200g radishes
  • 200g green beans
  • 1 bunch spring onions
  • 1 pack coriander
  • 20 gyozas
  • Crispy chilli oil
  • Sesame seeds

Sesame dressing

  • 3 tbsp tahini
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • Juice of 1/2 lime

Soy dressing

  • Juice of 1 lime
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1/2 tbsp sesame oil

Preparation

  1. Slice the cucumber in half lengthways then chop into large bite size pieces.

  2. With the skin facing upwards, use the flat side of a large knife and smash the cucumber chunks.

  3. Add all the cucumber, radishes and green beans into a large serving dish.

  4. Cook the gyozas according to packet instructions then set aside to cool completely.

  5. Mix the ingredients for the sesame dressing and the soy dressing in separate bowls.

  6. Mix the gyozas in the veg, pour over the sesame dressing and gently toss well.

  7. Repeat with the soy dressing then mix through the coriander until everything is well combined and coated.

  8. Top with crispy chilli oil and sesame seeds then dig in.
