Spring Roll Salad with Peanut Dressing

Ingredients

  • 1 mango
  • 1 bell pepper
  • 1 cucumber (avoid the middle bit)
  • 1 large carrot
  • 1/4 purple cabbage
  • 3-4 spring onions
  • 1/2 pack vermicelli noodles

Sauce

  • 1/2 cup creamy peanut butter
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons maple syrup
  • 1.5 tablespoons toasted sesame oil
  • 3 cloves garlic, minced
  • 3.75 tablespoons water (or more depending on desired consistency)
  • salt to taste

Preparation

  1. Finely slice all the vegetables into thin strips.

  2. Prepare the vermicelli noodles according to package instructions.

  3. Mix all the sauce ingredients together until well combined and smooth.

  4. Combine the sliced vegetables, prepared noodles, and sauce in a large bowl and toss to coat evenly.
