Gluten Free Shortbread Cookies

Ingredients

  • 8 tablespoons butter
  • 1/3 cup brown sugar
  • 1 cup gluten free flour
  • 1/4 teaspoon xanthan gum
  • 1/4 cup (36 g) cornstarch
  • 1/2 cup semi sweet chocolate

Preparation

  1. Preheat your oven to 325°F

  2. Line a large rimmed baking sheet with parchment paper and set it aside

  3. In a large bowl, place the butter, brown sugar and beat until light and fluffy (about 3 minutes)

  4. Add the flour, xanthan gum (if used) and cornstarch, and mix until just combined

  5. The dough will seem crumbly at first, but just keep mixing until it comes together
