Hariyali Chicken Tikka Kebabs
Ingredients
- 600g chicken thigh meat
- 2 small red onions
Marinade
- 2 tsp lemon juice
- 1 tsp sea salt
- 1 cup fresh coriander leaves
- 1/3 cup fresh mint leaves
- 2 tsp ginger
- 2 tsp garlic
- 1-2 green chillies
- 1 tbsp vegetable oil
- 1/2 tsp ground cumin
- 1/2 tsp garam masala
- 1/4 tsp ground cardamom
- Pinch ground cinnamon
- Pinch black pepper
- 3 tbsp natural yoghurt
- 1 tbsp cold water
Preparation
Put the chicken pieces, lemon juice, and salt into a mixing bowl and stir through. Place in the fridge while you prepare the rest of the marinade.
Put the remaining ingredients in a blender and blend until smooth. Stir the mixture through the chicken and place back in the fridge for 6 or more hours.
If using wooden skewers, soak them in water for an hour first. Thread the chicken and red onion pieces onto the skewers and pack tightly. Grill or barbecue for 5 minutes on each side until cooked through and slightly charred.

A cup is equivalent to 250ml
