Sticky Apricot Chicken Skewers
Ingredients
- 1 1/4 pounds thin sliced chicken breast
- Kosher salt
- Black pepper
- olive oil
- Bamboo or metal BBQ skewers
- 3/4 cup apricot jam
- 1 tablespoon Dijon mustard
- 1 large garlic clove, finely grated
Optional garnishes
- Fresh mint leaves, for serving (optional)
- Cooked rice or another grain, for serving (optional)
- Sliced cucumber, for serving (optional)
Preparation
Cut the chicken breast lengthwise into 2-inch wide strips. Season liberally with salt and pepper and drizzle with a little olive oil.
Thread 2 strips of chicken onto skewers. Transfer to a plate or small baking sheet.
Stir jam, Dijon mustard, and grated garlic until well combined. Set aside about one-third of the jam mixture for serving. Pour the remaining jam mixture over the chicken skewers and brush to thoroughly coat.
Heat one side of a grill to high heat for about 10 minutes. Brush the grates to clean, then lightly oil the grates with neutral oil. Reduce the heat to medium-high.
Grill the skewers over indirect heat for about 12 minutes, then brush with some of the jam mixture left on the baking sheet. Grill on the second side for about 5 minutes.
Turn off the heat, then set the skewers over the hot side of the grill for about 3-5 minutes more, until the glaze chars a little and the internal temperature reaches 165°F.
Serve the skewers with a drizzle of the remaining apricot jam mixture and enjoy.
