Homemade Vegan Pierogies
Ingredients
- 3 cups all purpose flour
- pinch of salt
- 1 cup water
- 1/4 cup melted vegan butter
- vegan butter
- 2 medium yellow onions
- 5 medium potatoes
- 1/4 unsweetened oat milk
- 1 tbsp garlic powder
- salt & pepper
Preparation
Make the dough by adding all ingredients together in a large bowl, knead until a smooth dough ball forms
Keep in clean bowl, cover and rest for an hour
While we wait for the dough make the filling
Peel the potatoes and cut them up small, add to a pot of boiling water
Drain once the potatoes are soft and mash them up
Add vegan butter to a non stick pan, finely dice onions add to pan and caramelize
Trick is to keep on low heat and stir often
In large bowl add mashed potatoes, onions, milk, salt n pepper and stir up
Cut your dough into 2 sections
Working with one at a time
Roll dough out into a thin square shape
Taking a glass or circle cutter cut out your circles
Take each circle of dough and stretch it out a little with your fingers, place roughly 1tbsp of filling into the center
Then fold the dough over and pinch the edges tightly
Do this till you run out of filling and use up all the dough
Boil your finished peirogies in a large pot, working in small batches so they don’t stick together
Once they float to the top they are ready
To pan fry them add vegan butter to a pan with onions, let those caramelize then add the peirogies and fry on medium heat till each side gets crispy
Serve with vegan sour cream (1 cup cashews, 1/2 cup water, 1 lemon, tsp salt blended up)
