Korean Chive Pancakes
Ingredients
- 100g garlic chives
- 1/2 medium onion
- 1 1/4 cups plain all purpose flour
- 1 packed tbsp cornstarch
- 3/4 tsp salt
- 1 1/4 cups ice cold water
- Oil, for frying
Preparation
Wash and dry your garlic chives well then slice into 2-3 inch long pieces. Cut the onion into thin slices.
In a medium bowl, add in the flour, cornstarch and salt. Whisk well and pour in the ice water until a smooth batter forms. Fold in the chives and onion till well combined.
Heat some oil in a pan over medium heat then add 1 cup of your batter in and spread into a thin layer to fill the pan. Cook until golden on both sides.
Serve with a soy-based dipping sauce.

This recipe makes 2 pancakes.
