Lentil Stuffed Eggplant

Ingredients

  • cut an eggplant in half
  • hollow them out with a spoon! Microwave them for 2 min
  • filled them with sauted ( with water/ vegetable stock) lentils with musrooms! Serve with a tofu spinach sauce! blend half a package of silken tofu with 1cup cooked spinach
  • 1 clove of garlic
  • nutrtional yeast
  • and tahini
  • and some rice milk
