Lentil Stuffed Eggplant
Ingredients
- cut an eggplant in half
- hollow them out with a spoon! Microwave them for 2 min
- filled them with sauted ( with water/ vegetable stock) lentils with musrooms! Serve with a tofu spinach sauce! blend half a package of silken tofu with 1cup cooked spinach
- 1 clove of garlic
- nutrtional yeast
- and tahini
- and some rice milk
