Masoor Dal Lentil Crepes
Ingredients
- 1 cup split red lentils
- 1 piece ginger
- 1 green chili
- 1/2 cup water for blending
- 1/4 cup fresh cilantro
Additional spices
- cumin powder or seeds
- turmeric
- hing
Optional toppings
- finely chopped onion
- tomato
- shredded carrot
Preparation
Rinse the lentils 2 or 3 times and soak for at least 4 hours or overnight.
Drain the lentils and add them to a blender with green chili, ginger, and water. Blend until smooth, then stir in cilantro. Adjust the batter to be slightly thick but pourable by adding more water if necessary, and let it sit for 10 minutes.
Heat a pan on low heat and brush it with oil. Pour a small ladle of batter in the center and spread it into a circle.
Drizzle a teaspoon of oil on top of the crepe and cook until the edges are browned. Flip and cook for a few more minutes.
If using toppings, add them when bubbles form on the batter before flipping.
Serving suggestions
Serve the crepes warm with a chutney or pickle of your choice.
