Vegan Masala French Toast

Ingredients

  • 4 slices of medium-thick white toast bread (use gluten-free bread for a gluten-free option)
  • 1 block of silken tofu (300g)
  • 2 tbsp gram flour (besan / chickpea flour)
  • 1 tbsp plain flour (use gluten-free flour for a gluten-free option)
  • 1/2 cup plant milk of choice (almond milk used in the recipe)
  • 1/2 red onion, finely chopped
  • 1/2 tomato, finely chopped
  • Fresh coriander, finely chopped
  • 1 garlic clove, crushed
  • 1 green chilli, finely chopped (green bird’s eye chilli or green finger chilli for less spiciness)
  • 3/4 tsp smoked paprika powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp cumin powder
  • 2/3 tsp coriander powder
  • Pinch of turmeric powder
  • 1/2 tsp Himalayan salt
  • 1/4 tsp ground black pepper
  • To garnish: fresh coriander (cilantro), chopped; red chilli flakes

Preparation

  1. Prepare the "egg" mixture: Blend silken tofu and almond milk in a blender until smooth. Transfer the mixture to a flat soup bowl for soaking the bread slices.

  2. Finely chop tomato, red onion, green chilli, and fresh coriander.

  3. Add plain flour and gram flour to the "egg" mixture, along with all the spices.

  4. Whisk everything until you have a smooth batter with a thin pancake-like consistency.

  5. Mix in the chopped red onion, tomato, green chilli, and fresh coriander into the batter.

  6. Dip one slice of bread into the batter, ensuring both sides are coated.

  7. Heat a non-stick pan and fry the coated bread slice for 2-3 minutes. Optionally, add some oil for frying.

  8. Flip the bread slice and fry the other side for another 2-3 minutes until golden and crispy. Transfer to a plate.

  9. Garnish with chopped fresh coriander and red chilli flakes.

  10. Serve the masala French toast with ketchup, green chutney, and a cup of masala chai.
