Oven Baked Crispy Fries with Guacamole

Ingredients

Fries

  • 4 large baking potatoes
  • 1.5 tablespoons olive oil
  • salt and pepper
  • a sprinkle of paprika

Guacamole

  • 3 avocados
  • 1 firm tomato, finely diced
  • 1/2 white onion
  • 1/2 cup chopped cilantro
  • 2 tablespoons fresh lemon or lime juice
  • Optional salt and pepper to taste

Preparation

Fries

  1. Preheat oven to 400.

  2. Wash potatoes leaving skin on or peel if preferred.

  3. Fill a bowl with cold water.

  4. Slice potatoes into 3-4 slices lengthwise and then into strips.

  5. Let potatoes soak in cold water for at least 30 minutes to remove starch.

  6. Remove potatoes from water and pat dry.

  7. Toss with oil and seasoning.

  8. Bake for 30 minutes.

  9. Turn fries and bake for an additional 10-15 minutes.

Guacamole

  1. Open the avocados and scoop out the flesh.

  2. Mash the flesh with a fork to desired consistency.

  3. Stir in the other ingredients.
