Oven-Baked Crispy Fries with Guacamole
Ingredients
Fries
- 4 large baking potatoes
- 1 1/2 tablespoons olive oil
- salt and pepper
- a sprinkle of paprika
Guacamole
- 3 avocados
- 1 firm tomato
- 1/2 white onion
- 1/2 cup cilantro
- 2 tablespoons fresh lemon or lime juice
- optional salt and pepper to taste
Preparation
Fries
Preheat the oven to 400 degrees.
Wash the potatoes leaving skin on; you can peel them if you prefer.
Fill a bowl with cold water.
Slice potatoes into 3-4 slices lengthwise and then into strips.
Let potatoes soak in cold water for at least 30 minutes to remove starch, resulting in crispier fries.
Remove from water and pat dry.
Toss with oil and seasoning.
Bake for 30 minutes.
Turn fries and bake for an additional 10-15 minutes.
Guacamole
Open the avocados and scoop out the flesh. An easy way is to cut it lengthwise around the pit, then strike the pit with a chef's knife, twist to remove, and scoop out the flesh.
Mash the flesh with a fork; it can still have hard parts, according to your preference.
Stir in the other ingredients and enjoy.
