Pad Thai Vegan Noodles

Ingredients

  • 2 portions of rice noodles
  • 2 carrots cut in long slices
  • 1/2 cup celery
  • 1 cup mushroom sliced
  • 1 cup of ready-made pad Thai sauce (available in Lulu)
  • 1 tablespoon sesame oil
  • 2 cloves garlic mashed
  • 2 tablespoons cashew nuts
  • 1/4 cup green onions, cut into rings
  • 1 tablespoon red pepper (to taste)
  • 1 tablespoon sesame and nigella seeds for the surface
  • Grilled Sweet potato Ingredients
  • 1 sweet potato cut into strips
  • 1 tsp garlic and onion powder each
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sesame oil
  • Salt and black pepper to taste

Preparation

  1. Mix all the grilled sweet potatoes ingredients and roast them in an air fryer at 200 degrees for 20 minutes and stir occasionally

  2. Cook the rice noodles in boiling water for 5 minutes and place in a cold water bath with ice

  3. Heat the oil and add the garlic, celery, onion, mushroom and carrots and then sauté

  4. Add the sauce, cashew, sweet potato and noodles and stir gently for only 2 minutes

  5. Serve the vermicelli in the serving dish and sprinkle the surface with sesame and nigella seeds

  6. Add lemon wedges and enjoy
