Poached Egg with Smoked Salmon and Greens Salad
Ingredients
- 1 organic egg
- baby arugula
- sliced cherry tomatoes
- flaked smoked salmon
- avocado
- thinly sliced red onion
- fresh dill
- crumbled goat cheese
- extra virgin olive oil
- fresh lemon juice
- EBTB seasoning
- micro greens
Preparation
Bring a few inches of water to a simmer in a medium sauce pan. Gently crack one organic egg directly into the water. Continue to lightly simmer for 2-3 minutes. Remove with slotted spoon.
Arrange baby arugula on a plate. Top with sliced cherry tomatoes, flaked smoked salmon, avocado, thinly sliced red onion, fresh dill, and crumbled goat cheese. Lightly drizzle with extra virgin olive oil and a squeeze of fresh lemon juice.
Top with the poached egg. Add a sprinkle of EBTB seasoning and micro greens.
