Poached Egg with Smoked Salmon and Greens Salad

Ingredients

  • 1 organic egg
  • baby arugula
  • sliced cherry tomatoes
  • flaked smoked salmon
  • avocado
  • thinly sliced red onion
  • fresh dill
  • crumbled goat cheese
  • extra virgin olive oil
  • fresh lemon juice
  • EBTB seasoning
  • micro greens

Preparation

  1. Bring a few inches of water to a simmer in a medium sauce pan. Gently crack one organic egg directly into the water. Continue to lightly simmer for 2-3 minutes. Remove with slotted spoon.

  2. Arrange baby arugula on a plate. Top with sliced cherry tomatoes, flaked smoked salmon, avocado, thinly sliced red onion, fresh dill, and crumbled goat cheese. Lightly drizzle with extra virgin olive oil and a squeeze of fresh lemon juice.

  3. Top with the poached egg. Add a sprinkle of EBTB seasoning and micro greens.
