Smoked Salmon Avocado Toast

Ingredients

  • 1 pasture raised organic egg
  • bread of choice (e.g., Udi's Gluten Free)
  • 1 TBSP chèvre
  • fresh dill
  • sliced avocado
  • flaked smoked salmon
  • sliced cherry tomatoes
  • sliced red onion
  • Trader Joe's EBTB Seasoning
  • micro greens

Preparation

  1. Bring water to a simmer in a medium sauce pan. Add one pasture raised organic egg directly to water and let lightly simmer for 2-3 minutes. Remove with slotted spoon.

  2. Toast bread of choice, such as Udi's Gluten Free bread from Whole Foods.

  3. Spread toast with 1 TBSP chèvre and sprinkle with fresh dill.

  4. Top with sliced avocado, flaked smoked salmon, the poached egg, sliced cherry tomatoes, sliced red onion, Trader Joe's EBTB Seasoning, and micro greens.
