Air Fryer Plantains with Chunky Guacamole

Ingredients

  • very ripe plantains
  • 1 large avocado
  • 1/4 deseeded and finely minced jalapeño
  • 1/4 cup diced tomatoes
  • 2 tablespoons diced red onion
  • 1 tablespoon chopped cilantro
  • 2 teaspoons fresh lime juice
  • salt to taste
  • black pepper to taste

Preparation

  1. Slice very ripe plantains to desired thickness; the thinner, the crispier.

  2. Optionally brush with a little oil, but it is not necessary.

  3. Cook in air fryer at 400°F until golden brown, about 15 minutes.

  4. Mash 1 large avocado with a fork into large chunks.

  5. Add 1/4 deseeded and finely minced jalapeño, 1/4 cup diced tomatoes, 2 tablespoons diced red onion, 1 tablespoon chopped cilantro, 2 teaspoons fresh lime juice, and salt and black pepper to taste.
