Air Fryer Plantains with Chunky Guacamole
Ingredients
- very ripe plantains
- 1 large avocado
- 1/4 deseeded and finely minced jalapeño
- 1/4 cup diced tomatoes
- 2 tablespoons diced red onion
- 1 tablespoon chopped cilantro
- 2 teaspoons fresh lime juice
- salt to taste
- black pepper to taste
Preparation
Slice very ripe plantains to desired thickness; the thinner, the crispier.
Optionally brush with a little oil, but it is not necessary.
Cook in air fryer at 400°F until golden brown, about 15 minutes.
Mash 1 large avocado with a fork into large chunks.
Add 1/4 deseeded and finely minced jalapeño, 1/4 cup diced tomatoes, 2 tablespoons diced red onion, 1 tablespoon chopped cilantro, 2 teaspoons fresh lime juice, and salt and black pepper to taste.
