Crispy Air Fryer Plantains with Chunky Guacamole

Ingredients

Plantains

  • very ripe plantains
  • oil (optional)

Guacamole

  • 1 large avocado
  • 1/4 deseeded jalapeño, finely minced
  • 1/4 cup diced tomatoes
  • 2 tbsp diced red onion
  • 1 tbsp chopped cilantro
  • 2 tsp fresh lime juice
  • salt to taste
  • black pepper to taste

Preparation

Plantains

  1. Slice very ripe plantains to desired thickness; thinner slices yield crispier results

  2. Brush with a little oil if desired (optional)

  3. Cook in air fryer at 400°F until golden brown, about 15 minutes

Guacamole

  1. Mash 1 large avocado with a fork into large chunks

  2. Add 1/4 deseeded jalapeño (finely minced), 1/4 cup diced tomatoes, 2 tbsp diced red onion, 1 tbsp chopped cilantro, 2 tsp fresh lime juice, salt, and black pepper to taste
