Crispy Air Fryer Plantains with Chunky Guacamole
Ingredients
Plantains
- very ripe plantains
- oil (optional)
Guacamole
- 1 large avocado
- 1/4 deseeded jalapeño, finely minced
- 1/4 cup diced tomatoes
- 2 tbsp diced red onion
- 1 tbsp chopped cilantro
- 2 tsp fresh lime juice
- salt to taste
- black pepper to taste
Preparation
Plantains
Slice very ripe plantains to desired thickness; thinner slices yield crispier results
Brush with a little oil if desired (optional)
Cook in air fryer at 400°F until golden brown, about 15 minutes
Guacamole
Mash 1 large avocado with a fork into large chunks
Add 1/4 deseeded jalapeño (finely minced), 1/4 cup diced tomatoes, 2 tbsp diced red onion, 1 tbsp chopped cilantro, 2 tsp fresh lime juice, salt, and black pepper to taste
