Crispy Avocado Spring Rolls
Ingredients
- 3 medium ripe avocados, seeded and mashed
- 1/3 cup chopped green onions
- 1 jalapeño, seeded and diced
- 3 tablespoons chopped cilantro
- 8-10 spring roll pastry dough wrappers
- 1 cup oil for frying (optional for air fryer method)
Preparation
Mix the mashed avocados with chopped green onions, cilantro, and diced jalapeño.
If frying, heat oil in a pan or wok.
Place the avocado mixture in the center of each wrapper.
Wet the edges with water using your finger.
Fold the bottom edge over the filling and roll tightly.
Fold in the sides and continue rolling to seal.
Repeat with all wrappers.
Fry in hot oil for 2 minutes per side until golden brown, or air fry at 390°F for 15 minutes, flipping halfway through.
Remove to a paper towel-lined plate.
Serve immediately with your favorite dipping sauce.
