Crispy Avocado Spring Rolls
Ingredients
- 1 lb traditional guacamole
- 1/3 cup chopped green onions
- 1 jalapeño, seeded and diced
- 3 tbsp chopped cilantro
- 8-10 spring roll pastry dough wrappers
- 1 cup oil for frying
Preparation
Add chopped green onions, cilantro, and diced jalapeño to the guacamole.
Meanwhile, add oil to a frying pan or wok and heat it.
Place the avocado mixture in the center of each spring roll wrapper.
Using your finger, rub the edges of the wrapper with water.
Bring the bottom edge of the wrapper over the filling and roll it tightly.
Fold in the sides and continue rolling to seal the egg roll.
Repeat the process until all wrappers are used.
Fry the egg rolls in the hot oil for 2 minutes on each side until golden brown.
Remove with metal tongs onto a paper towel-lined plate.
Serve immediately with your favorite dipping sauce.
