Crispy Avocado Spring Rolls
Ingredients
- 3 medium ripe avocados
- 1/3 cup chopped green onions
- 1 jalapeño
- 3 tablespoons chopped cilantro
- 8-10 spring roll wrappers
- 1 cup oil for frying
Preparation
Mash the ripe avocados.
Mix the mashed avocados with chopped green onions, cilantro, and diced jalapeño.
Heat oil in a frying pan or wok if frying, or preheat the air fryer to 390°F.
Place the avocado mixture in the center of each spring roll wrapper.
Rub the edges with water using your finger and roll the wrapper tightly around the filling, folding in the sides.
Press to seal and repeat with all wrappers.
Fry the egg rolls in hot oil for 2 minutes on each side until golden brown, or air fry for 15 minutes, flipping halfway through.
Remove to a paper towel-lined plate to drain.
Serve immediately with your favorite dipping sauce.
