Vegan Fresh Corn Salsa

Ingredients

  • 3 ears of corn
  • 1 medium red bell pepper, small dice (1 cup)
  • 1/2 jalapeno, minced (or more if desired)
  • 1/4 red onion, small dice (1/2 cup)
  • 1/2 cup chopped cilantro
  • 1 1/2 tablespoons lime juice
  • Pinch of salt and black pepper

Preparation

  1. Using a knife, slice the corn kernels from the cobs. You should have about 3 cups of corn.

  2. Combine all ingredients into a bowl and stir to combine.

  3. Store in an airtight container in the refrigerator for up to 5 days.

Tips

  1. Feel free to spice this salsa up with more jalapeno or other chiles.

  2. You can also add a can of black beans for a black bean and corn salsa.
