Quick Vegan Street Corn Nachos

Ingredients

  • 10 tortilla chips
  • 2 cups vegan cheese shreds
  • 1 cup corn, fresh or canned
  • 1/2 cup vegan mayo
  • Juice of 1 lime
  • 1 teaspoon chili lime salt (Trader Joe's brand)
  • 2 cloves garlic, finely minced
  • 1/4 cup cilantro, chopped
  • Chili lime salt, for sprinkling

Preparation

  1. Preheat oven to 400 degrees

  2. Place half the tortilla chips on a sheet pan

  3. Sprinkle half the vegan cheese on top

  4. Top with half the corn

  5. Place the remaining chips on top

  6. Sprinkle the remaining vegan cheese on top

  7. Top with the remaining corn

  8. Bake for 6-8 minutes or until the vegan cheese is melted and the corn is hot

  9. Whisk together the vegan mayo, lime juice, chili lime salt, and minced garlic in a small bowl

  10. Set the sauce aside

  11. Drizzle the chili lime mayo over the nachos

  12. Sprinkle with chopped cilantro

  13. Serve immediately
