Sriracha Lime Grilled Tofu Skewers with Cilantro Lime Rightrice and Mango Salsa

Ingredients

  • 1 package extra firm tofu, drained and pressed
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp sriracha
  • 2 tbsp agave
  • 1 tbsp lime juice
  • Salt to taste

Mango Salsa

  • 1 cup ripe mango, diced
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 small jalapeño, finely minced
  • 2 tbsp finely chopped cilantro
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 1 bag Cilantro Lime RightRice

Preparation

  1. Drain tofu and press to remove as much moisture as possible (you can press up to a few hours if you have time).

  2. Whisk together soy sauce, sesame oil, sriracha, agave, lime juice, and salt.

  3. Thread tofu onto skewers and brush liberally with marinade on both sides. Let sit while the grill heats to medium.

  4. Meanwhile, bring 1 1/3 cups of water to a boil. Add Cilantro Lime RightRice, immediately remove from heat and cover. Let stand covered for 12 minutes, then fluff with a fork.

  5. In a bowl, stir together all ingredients for mango salsa.

  6. Grill tofu on each side for 5-6 minutes and continue brushing with leftover marinade.

  7. Serve grilled tofu over RightRice and top with mango salsa.
