Grated Egg Toast with Avocado and Ajvar
Ingredients
- 2 boiled eggs
- 2 slices sourdough
- Ajvar
- 1 avocado
- crispy bacon medallions
- parsley
- red onion
Preparation
Start by boiling your eggs for 10 minutes in boiling water.
Then run under cold water once cooked through to cool down.
Once cooled a bit, peel the shell.
Start grating your boiled egg on a cheese grater.
Place the grated eggs on top of your chosen topping on the sourdough and enjoy.
Tips
Grating the eggs makes them light and fluffy.
Example toppings include Ajvar and smashed avocado.
This recipe can easily serve two people.
