Puffpastrytraybake

Ingredients

  • 4 small red onions
  • 10g butter
  • 2 tbsp balsamic glaze
  • 200g feta
  • cherry tomatoes

Preparation

  1. Slice 4 small red onions and cook them in 10g butter until soft

  2. Add 2 tbsp balsamic glaze to caramelise them

  3. Put a sheet of jus rol puff pastry on a baking sheet (I used the frozen one) and score a line all around about 2cms in from each edge

  4. Ahead the onion mix over the top

  5. Cube 200g feta and spread over the onion mix

  6. Added cherry tomatoes to Andy's half (I don't like cooked tomatoes)

  7. Cooked for 20 minutes at 200°C

  8. I had a quarter of the sheet with salad and will have the other piece for lunch tomorrow. I've already loads of ideas for variations on the toppings, thinking Rhubarb or plums for the next one
