Quesadillas

Ingredients

  • 1 can black beans, drained well
  • 1 can sweetcorn, drained well
  • 2 cups wilted spinach, drained well
  • 1.5 cup grated cheddar cheese ?3 spring onions finely chopped ?Small bunch coriander finely chopped ?1 chilli, finely chopped ?6-8 tortillas ?salt & pepper

Preparation

  1. First make sure the black beans, sweetcorn and spinach are drained well

  2. This is important because otherwise the final mix will be too watery

  3. Put all the ingredients except the tortillas in an bowl

  4. Make sure its well mixed

  5. Divide the mixture equally between your tortillas and fold them in half ?Dry fry in a non stick pan over a medium heat for a few minutes each side ?Cut into triangles and serve ? We always have them with loads of guacamole (because guacamole makes everything even better!) #cookinghack to wilt your spinach put it in a colander and pour boiling water from the kettle over it

  6. Rinse with cold water so it’s cold enough to handle and squeeze out the excess water
