Taco Thursday

Ingredients

  • 1 1/2 cup grated carrot , packed (about 200 g) + 1/2 cup tap water to cook⠀
  • 1/2 cup grated vegan cheese i used cheddar (75g)⠀
  • 2 flax eggs (2tbsp flaxseed mixed with water)⠀
  • 3 tablespoon almond flour or oat flour ⠀
  • 1/4 teaspoon salt (optional)

Preparation

  1. Begin by preheating your oven to 200C, and then wash, peel, and grate your carrots well. Prepare your flax egg by letting it sit once mixed with water⠀

  2. Place your grated carrots into a bowl and fill with 1/2 cup of water. Microwave for 2-3 minutes. Once finished, drain and place your carrots unto an absorbent paper towel. Squeeze out any excess water.⠀

  3. Place your carrot into a bowl along with your flax eggs, almond flour, vegan cheese, salt and pepper.⠀

  4. Divide your batter into 5 portions, and press each portion into a flat circle on a lined baking tray. Make sure they’re spaced well.⠀

  5. Bake for 15 minutes or until crispy, and add all of the fillings you desire!⠀
