Vegan Black Bean Burger

Ingredients

  • 1 cup grated zucchini (about one small/medium zucchini)
  • 1/2 cup pecans, minced (measure after mincing)
  • 1 – 15 oz. can black beans, drained and rinsed
  • 1 Tablespoon flax meal
  • 1 Tablespoon tamari
  • 2 Tablespoons tomato paste
  • 1/4 teaspoon liquid smoke
  • 1 Tablespoon miso
  • 1/2 cup panko bread crumbs

Seasonings

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Tablespoons dried minced onion flakes
  • 1/4 to 1/2 teaspoon red pepper flake
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon coriander
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon sea salt (+/- to taste)

Preparation

  1. Grate the zucchini and mince the pecans if not already prepared.

  2. Drain and rinse the black beans.

  3. In a large bowl, combine all ingredients and mix until well blended.

  4. Form the mixture into 4 patties.

  5. Cook the patties in a skillet over medium heat for 5-7 minutes per side, or bake in a preheated oven at 375°F for 20-25 minutes, until golden brown and heated through.
