Vegan Black Bean Burger
Ingredients
- 1 cup grated zucchini (about one small/medium zucchini)
- 1/2 cup pecans, minced (measure after mincing)
- 1 – 15 oz. can black beans, drained and rinsed
- 1 Tablespoon flax meal
- 1 Tablespoon tamari
- 2 Tablespoons tomato paste
- 1/4 teaspoon liquid smoke
- 1 Tablespoon miso
- 1/2 cup panko bread crumbs
Seasonings
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 Tablespoons dried minced onion flakes
- 1/4 to 1/2 teaspoon red pepper flake
- 1/4 teaspoon ground mustard
- 1/4 teaspoon coriander
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/8 teaspoon sea salt (+/- to taste)
Preparation
Grate the zucchini and mince the pecans if not already prepared.
Drain and rinse the black beans.
In a large bowl, combine all ingredients and mix until well blended.
Form the mixture into 4 patties.
Cook the patties in a skillet over medium heat for 5-7 minutes per side, or bake in a preheated oven at 375°F for 20-25 minutes, until golden brown and heated through.
