Sweet Potato Black Bean Vegan Burgers
Ingredients
- 1 tin black beans
- 3 tablespoons oat flour
- 1 large sweet potato
- tahini
- maple syrup
- 1/2 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 2 tablespoons nutritional yeast
- 1/2 cup panko bread crumbs
Preparation
Cook the sweet potato by microwaving for 6 minutes, then baking in the oven for 25 minutes, and remove the skin.
Prepare oat flour by blitzing rolled oats if not already made.
In a bowl, mix together the black beans, oat flour, cooked sweet potato, tahini, maple syrup, garlic powder, cayenne pepper, smoked paprika, and nutritional yeast.
Leave the mixture in the fridge for 20 minutes to firm up.
Mix in 1/2 cup of panko bread crumbs.
Form the mixture into burgers and coat them in additional panko bread crumbs.
