Vegan Cashew Cheese with Pistachios

Ingredients

  • 1 cup cashews, soaked overnight
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Juice of 1 lime
  • 4 tbsp nutritional yeast
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 2 tablespoons water
  • 1/3 cup crushed pistachios, to coat

Preparation

  1. Drain cashews and add with all ingredients except pistachios to a blender and mix until smooth.

  2. Place a cheese cloth or kitchen towel on top of a mesh strainer and add cheese blend on top.

  3. Gather corners of the cloth and bring them together gently twisting, tight with an elastic band.

  4. Place strainer on top of a bowl and let set in the fridge for 8-12 hrs until cheese is firm to the touch.

  5. When it is set coat with pistachios and enjoy!
