Easy Healthy Vegan Mozzarella Cheese
Ingredients
- 50g cashews
- 1 tbsp psyllium husks
- 200ml water or soy milk
- 1 tbsp nutritional yeast
- about 1/8 tsp of salt
- pinch of garlic powder
Preparation
Soak cashews in hot water and cover the bowl with a lid. Let it sit for 2 hours.
Add the psyllium husks to a small jar and fill in 200ml of water, let it sit for 2 hours as well.
Drain cashews. Mix everything in a food processor or high speed blender until smooth.
Brush a small bowl with a bit of oil. Fill in the mozzarella mass and put it in the fridge for about an hour.
Serve with ripe organic tomatoes, fresh basil and balsamic vinegar. Enjoy.
