Easy Healthy Vegan Mozzarella Cheese

Ingredients

  • 50g cashews
  • 1 tbsp psyllium husks
  • 200ml water or soy milk
  • 1 tbsp nutritional yeast
  • about 1/8 tsp of salt
  • pinch of garlic powder

Preparation

  1. Soak cashews in hot water and cover the bowl with a lid. Let it sit for 2 hours.

  2. Add the psyllium husks to a small jar and fill in 200ml of water, let it sit for 2 hours as well.

  3. Drain cashews. Mix everything in a food processor or high speed blender until smooth.

  4. Brush a small bowl with a bit of oil. Fill in the mozzarella mass and put it in the fridge for about an hour.

  5. Serve with ripe organic tomatoes, fresh basil and balsamic vinegar. Enjoy.
