Vegan Garlic Mushroom Spinach Pizza
Ingredients
- 1 batch pizza dough (1/2 lbs) (gluten-free, if desired)
Spinach cheese
- 7 oz spinach (200 g) fresh or frozen
- 3 garlic cloves
- salt, pepper to taste
- 2/3 cup dairy-free cream cheese (150 g)
- 3/4 cup dairy-free cheese (75 g) shredded
Roasted mushrooms
- 1 tbsp olive oil
- 5 oz mushrooms (150 g)
- salt to taste
Topping
- 2 tbsp pine nuts
Preparation
Prepare the pizza dough according to its recipe or package instructions
Roast the mushrooms: Heat olive oil in a pan over medium heat, add mushrooms and salt, cook until tender and browned
Make the spinach cheese mixture: Sauté garlic in a pan until fragrant, add spinach and cook until wilted, then stir in dairy-free cream cheese and shredded dairy-free cheese until combined
Assemble the pizza: Roll out the dough, spread the spinach cheese mixture evenly, top with roasted mushrooms and pine nuts
Bake the pizza in a preheated oven at 220°C for 10-15 minutes or until the crust is golden and toppings are bubbly
