Vegan Hearts of Palm Mozzarella Sticks
Ingredients
- 2 14 oz cans hearts of palm
- marinara sauce for serving
- vegan ranch for serving
Flour coating
- 2 TBSP chickpea flour
Batter
- 1/4 C chickpea flour
- 1/3 C water
- 1 TBSP nutritional yeast
- 1 TBSP miso paste
- 1/2 tsp salt
- 1/2 tsp garlic powder
Breadcrumb mixture
- 1 C GF breadcrumbs
- 2 TBSP nutritional yeast
- 1 tsp Italian seasoning
Preparation
Preheat oven to 375 degrees Fahrenheit.
Drain and pat dry the hearts of palm, then slice them lengthwise to about 3/4 inch thick if necessary.
Prepare the flour coating by combining its ingredients in a bowl.
Prepare the batter by whisking together its ingredients in another bowl.
Prepare the breadcrumb mixture by mixing its ingredients in a third bowl.
One at a time, coat each heart of palm piece by first rolling in the flour coating, then dipping in the batter, and finally coating with the breadcrumb mixture.
Place the coated sticks on a parchment-lined baking sheet and optionally spray lightly with olive oil for extra crispiness.
Bake for 25-30 minutes or until golden and crispy.
Serve hot, garnished with fresh parsley, and enjoy with marinara sauce and/or vegan ranch for dipping.
