Vegan Hearts of Palm Mozzarella Sticks
Ingredients
- 2 14 oz cans hearts of palm, drained and patted dry
- marinara sauce and/or vegan ranch for serving
Dry flour coating
- 2 TBSP chickpea flour
Batter mixture
- 1/4 C chickpea flour
- 1/3 C water
- 1 TBSP nutritional yeast
- 1 TBSP miso paste
- 1/2 tsp salt
- 1/2 tsp garlic powder
Breadcrumb coating
- 1 C GF breadcrumbs
- 2 TBSP nutritional yeast
- 1 tsp Italian seasoning
Preparation
Preheat oven to 375 degrees Fahrenheit.
Slice hearts of palm lengthwise if needed to achieve about 3/4 inch thickness.
One at a time, roll each piece first in the flour, then in the batter, and then coat with breadcrumbs by shaking in the bowl.
Place each coated stick on a parchment-lined baking sheet. Optionally, spray lightly with olive oil for extra crispiness. Bake for 25 to 30 minutes.
Serve hot, garnished with fresh parsley. Enjoy with spicy marinara and vegan ranch for dipping.
