Gf Vegan Mozzarella Sticks with Hearts of Palm
Ingredients
- 2 14 oz cans hearts of palm, drained and patted dry
- Marinara sauce and/or vegan ranch (for serving)
- 2 tbsp chickpea flour (for Bowl #1)
- 1/4 cup chickpea flour (for Bowl #2)
- 1/3 cup water (for Bowl #2)
- 1 tbsp nutritional yeast (for Bowl #2 and Bowl #3)
- 1 tbsp miso paste (for Bowl #2)
- 1/2 tsp salt (for Bowl #2)
- 1/2 tsp garlic powder (for Bowl #2)
- 1 cup GF breadcrumbs (such as cauliflower breadcrumbs)
- 1 tsp Italian seasoning (for Bowl #3)
Preparation
Preheat the oven to 375F (190C).
Slice the hearts of palm lengthwise if needed, aiming for a thickness of about 3/4".
Prepare three bowls
Bowl #1: Place 2 tbsp of chickpea flour.
Bowl #2: Combine 1/4 cup chickpea flour, 1/3 cup water, 1 tbsp nutritional yeast, 1 tbsp miso paste, 1/2 tsp salt, and 1/2 tsp garlic powder. Mix well.
Bowl #3: Mix 1 cup of GF breadcrumbs, 2 tbsp nutritional yeast, and 1 tsp Italian seasoning.
Take each heart of palm stick and coat it by rolling it first in Bowl #1 (chickpea flour), then in Bowl #2 (batter mixture), and finally place it in Bowl #3 (breadcrumb mixture), shaking the bowl to coat the stick evenly.
Place each coated stick on a baking sheet lined with parchment paper. Optionally, spray them lightly with olive oil for extra crispiness.
Bake the mozzarella sticks in the preheated oven for 25-30 minutes until they are golden and crispy.
Serve the mozzarella sticks hot, garnished with fresh parsley. They are delicious with spicy marinara sauce and vegan ranch for dipping.
