Gluten-Free Vegan Hearts of Palm Mozzarella Sticks
Ingredients
- 2 14 oz cans hearts of palm, drained and patted dry
- marinara sauce and/or vegan ranch for serving
Bowl 1
- 2 TBSP chickpea flour
Bowl 2
- 1/4 C chickpea flour
- 1/3 C water
- 1 TBSP nutritional yeast
- 1 TBSP miso paste
- 1/2 tsp salt
- 1/2 tsp garlic powder
Bowl 3
- 1 C GF breadcrumbs
- 2 TBSP nutritional yeast
- 1 tsp Italian seasoning
Preparation
Preheat the oven to 375 degrees.
Slice the hearts of palm lengthwise if needed to achieve about 3/4 inch thickness.
Roll each piece one at a time first in the flour, then in the batter, and finally coat with breadcrumbs by shaking in the bowl.
Place the coated sticks on a parchment-lined baking sheet. Optionally, spray lightly with olive oil for extra crispiness and bake for 25-30 minutes.
Serve hot, garnished with fresh parsley, and enjoy with spicy marinara and vegan ranch for dipping.
