Vegan Jackfruit Tacos with Chipotle Lime Crema
Ingredients
- 6 tortillas
- 2 avocados (one for main use, one for garnishing)
- 8 small shiitake mushrooms
- 1 box of jackfruit (prepared)
- A handful of baby cilantro greens
- Few crumbles of vegan cheese
- 1 can of black beans
Chipotle lime crema
- 1/2 cup roasted cashews
- 1 small slice jalapeño pepper (seeds removed)
- Juice of 1 lime
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 heaping teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon tomato paste
Preparation
Sauce
Blend all the chipotle lime crema ingredients in a blender for 1 minute.
Assembly
Char the tortillas with a torch to add smoky flavor, if desired.
Mash the ripe avocado with 1 teaspoon of lemon juice and 1/2 teaspoon of salt; set aside.
Sauté the mushrooms with soy sauce, salt, garlic, and onion powder.
Spread the mashed avocado on the tortilla, add jackfruit, sautéed mushrooms, black beans, vegan cheese, and baby cilantro greens.
Drizzle the sauce over the taco and enjoy.
